Yummiest butter chicken (on repeat lately)
What better way to celebrate a new season with such a nourishing dish warming you up inside and out. I love spices especially because of there health benefits and medicinal power as they say in Ayurveda medicine, a massive tool for healing power that we humans should be consuming more of them, sorry but it’s true.
I don’t know about you but I’ve been loving the really cold starts to the day with the sun eventually rising.. being cosy and warm is the best. Even more so cooking and creating in the kitchen with my babes. This beautiful dish was made with sooo much love by me of course but mostly my little man, the energy, love and information his picked up on food and what it does for us. Teaching them young these simple tools and of course, very messy kitchen lol will make up for such a strong foundation for their health. Our babies need it more than ever so my goal as a mother is to provide endless knowledge, and in everyday life skills.
Here is what we put into our butter chicken 👇
For the slices
🌱 1.5 tsp ground paprika
🌱 1.5 tsp ground tumeric
🌱 2 tsp ground cumin
🌱 1 tsp ground garlic
🌱 2 tsp ground coriander
🌱 1/2 tsp fennel seeds crushed
🌱 1/2 tsp fenugreek seeds crushed
🌱 1 tsp ground cloves
🌱 1/2 tsp ground cinnamon
🌱 3 cardamom pods crushed
This beautiful mix of spices goes into the diced chicken and marinade (optional) can just add it all in your cooking at once with the sauce.
For the butter chicken recipe ingredients 👇
🌿 1.8kg diced organic chicken breast (thigh even better)
🌿 1 brown onion diced
🌿 1 tsp grated ginger
🌿 1 can coconut cream
🌿 1 cup whole peeled tomatoes (better with tomato paste, just had none)
🌿 Celtic salt
🌿 white pepper ( randomly my sons favourite atm) lol
🌿 1 cup meat stock
🌿 baby spinach from our garden 🪴
🌿 heaped tbsp ghee OR coconut oil or olive oil
To serve we did a stock infuse rice that we cooked off in ghee and onion first and added in some of the crushed fenugreek and fennel seed spices. Sooo yummy.
