My little darling turned 1 this week, it is such a huge milestone in their life. Not only a celebration for bubba but mumma too for the last 12 months, truly most magical feeling. Even though we decided on a very low key day for her I really wanted to create a beautiful cake in honour of her special day. Enter this truly decadent, soul nourishing cake.. often when one thinks of desserts it's an overload of sugar, additives and lots of rubbish to make it taste a delight. And yeah, that cake is one for some, but for my family I chose to create something that would nourish us from inside out. This is a gift I get to share with my family - to me this is part of motherhood as well. Showing up daily for my children but also providing them with the gift of real, wholefoods that will give them the best start to life. Because we do live in a toxic world wether we wanna admit it or not. So I am here doing my part for my children the best way I can.
This cake was a double recipe as I wanted to create a filling on the inside with my homemade lemon curd and raspbeeey chia jam. I decided to make a labne icing for the top, super proud of how this turned out. I am no baker but this I cannot stop eating hehe.. and thankfully the kiddies have enjoyed it too.
Now for my ingredients to this beauty, that took me all day with my babes by my side. Truly a job and a half baking, take my hat off to real bakers in this world & with kids. ♥︎♥︎
For the cake ingredients I used
3 cups almond meal
1/4 cup coconut flour
3/4 cup maple or sweetener of choice
1 tsp vanilla powder
1 lemon rind
4 eggs
1 tsp baking powder
1 tbsp apple cidar vinegar
1 cup coconut cream
1/2 cup ghee melted or coconut oil, cacao butter
All ingredients into thermomix and blend.
*Note * this is for 1 cake, my cake was doubled to get 2 tier.
Lemon curd
6 yolks
110g ghee
100ml lemon juice
65g rapadura sugar (Can you your sweetener of choice) this will make it go darker colour because of the sugar I used
Thermomix: place ghee in bowl and melt 1 min, 65 deg, sp 3. Insert butterfly whisk add your sugar, juice to bowl and mix 10 sec, sp3. Add your yolks and cook 10 mins, 80 deg sp4. This gave me little extra but can use to add into tier if you want more curd inside.
Raspberry chia jam
200g frozen raspberries
2 tbsp maple
1 tbsp chia seeds
Place berries into thermomix and cook 5 mins, 80 deg, speed 3. Add maple and chia seeds then mix sp 3. Allow to set. You can totally do this on stovetop I prefer it personally.
Labne Icing
3 tsp foraged children's blend (to make it pink) and extra nourishment
3 -4 tbsp raw honey
1 tsp vanilla powder
Labne yoghurt - used about 300g
Decorate how you prefer I just used whatever I had around the kitchen cupboards. Pink, fruit, flower goodies.

Tip - can totally turn this into a choccie cake and leave out the inside filling and just make a chocolate icing ontop. But be daring and give this a go 🔥🔥
